1 Minute Peanut Cake with Dark Chocolate PB Molten

After doing a little blog hopping last night, I came across something that was calling my name.  A peanut butter give away with a little friendly competition from Love Veggies & Yoga.  This was the perfect opportunity for me to try my peanut flour-dark chocolate peanut butter molten cake.  Slightly wordy and I am still working on the title but this one is for sure a home run.  The appeal of microwaving breakfast was magical to me and once I tried it last week from HEAB’s recipe I became hooked.  Now my mind is spinning with endless possibilities and combinations of flavor- I might run out of coffee mugs ;).  And especially now with this 1 minute DELICIOUS breakfast cake, you have absolutely no excuse to not have breakfast.

Oh and best of all, this is healthy!  No-seriously, I’m not kidding!  This is super high protein at 20 grams, 20 grams of carbs, barely 5 grams of sugar and the entire recipe is under 350 calories!!! Does it get any better than this?? Chocolate and peanut butter have been a vital part of my life and now that I can have it for breakfast guilt free?!? Heaven!

Ingredients:

1/4 cup roasted unsalted peanuts (pulsed in blender till finely ground, but not making peanut butter)

OR 1/4 cup peanut flour

1.5 tsp cocoa powder

1 tsp vanilla extract

1 tsp baking powder

1 egg

1 tbsp Dark Chocolate Dreams Peanut Butter

Directions:

Spray a deep coffee mug with non-stick spray.  Mix everything except the peanut butter.  Once everything is completely mixed, drop the tbsp of peanut butter in the middle of the mix so when it rises it creates the “molten” effect.  Microwave for 1 minute.  Pop the cake out and top with your favorite toppings.  I used a splash of sugar free syrup and some peanuts for garnish.  You could add even more peanutty delishness with some PB2 on top adding even more protein and still keeping it at 400 calories.  This has got to be one of the best ways to start any morning!

Look at that warmchocolaty molten goodness.  So sinful but so waistline friendly. Now go to your cupboard, get your coffee mug and make it happen!  Let me know how good yours turn out!

    This looks so delish and I saw Heather’s micro cake and ironically, I have a micro cake recipe coming up one of these days…after I get the pics ready 🙂 It’s not chocolate & PB though, and my goodness, yours looks so good!

    Hi, Heather! When your mama makes me more walnut butter in her Vita machine, I will gladly try this yummy breakfast recipe out1 I am not a PB fan. Have to NOT breathe when I use it for my hubby and kiddo. think it will work with walnuts??
