Easy Frozen Dark Chocolate & Peanut Butter Cups

Happy Easter Everyone!

Would you like some frozen healthy dark chocolate peanut butter cups?

And yes they are healthy as in sugar free, dairy free, nut free & soy free.  (peanut is a legume not a nut)

These are amazingly delicious and so easy not to mention they are man approved!  And actually he came up with a great idea for them which would be super fun for kids- put on them sticks and call them Peanut Butter Fudgiscles!!

You could essential get super Easter creative and do a strawberry with chocolate filling or lemon with blueberry, whatever would make pretty colors!

1 mini muffin tin

1 cup almond milk (or other non-dairy)

up to 1/2 cup cocoa powder, (I used 1/4 cup dark & 1/4 cup regular)

1/2 cup peanut butter (max you will need) {I also put almond butter and liked it better :)}

sweetener to taste- agave, honey, stevia…etc.


-Heat your milk and cocoa powder over stove top on medium heat. 

-Stir constantly to prevent scorching. 

-Once it is combined add your sweetener and put it in something that is easy to pour into muffin pan.

-When cool enough pour mixture into mini muffin cups and only fill half way.  Put into freezer so it can cool at least 15 minutes.

-Place 1 tsp peanut butter (or sun butter for allergies) on top of hardened chocolate and then pour remaining chocolate mixture on top.

-Freeze until ready to eat.

*For fudgiscle version use a maker if you have one, if not just use espresso cups or other small container that would make a reasonable sized snack!

    I love that this recipe uses ingredients that I almost always have on hand. I’ll definitely have to try it out sometime very soon!
