1 Minute Strawberry Dreams Muffin with Strawberry Cream Sauce

Hellooo Beautiful, and tasty, and easy.  Today is the last of the 1 Minute Muffin Series for a bit and why not go with everyone’s favorite berry, the strawberry. This muffin has the perfect amount of natural sweetness from the strawberries and a little secret ingredient for a pack of antioxidants- Pom Juice.  Yes while looking for ingredients to make this cake pretty (1 attempt was not) I found my long lost Pom Juice that I may have just bought for Martinis 😉

Depending on the flour you use to make this will determine most of your nutrition.  I used a combination of flax seed and coconut flour for omega’s and fiber.  But you can use wheat, or white for regular non-gluten free version.  I also wanted to original use oat flour but I didn’t have any fresh and I was too lazy to make some.   I do think walnut flour would be the best though 🙂 the nutty with the sweet-always amazing.

Know you should know the drill by now, grab your coffee mug and standard ingredients…


2 individual 1/4 cup fresh strawberries-{highly recommend organic, non-organic have proven carcinogens}.

1/4 cup preferred flour, I used 1 part coconut flour and 3 parts flax seed

1 tsp baking powder

1 tsp vanilla extract

1 egg or 1/4 cup eggwhite


Puree your strawberries and add everything else in!  Microwave for 1 minute, you may need to add 30 seconds if the middle is soft since this is super moist from the strawberries.

To make the sauce get your 2nd 1/4 cup strawberries and put in blender or magic bullet with 3-4 tbsp almond milk.  Add sweetener to taste.  I also added a bit of canned coconut cream but omit if you don’t want the flavor of coconut.

Feel free to try your own favorite fruit like blueberries, raspberries…etc.

1 Minute Belly Flattening Matcha Mint Chocolate Chip Muffin

It’s part 2 of my Magic Muffin Series & I know what you are thinking.  Is that a green muffin??  You have never seen a green muffin and will never eat a green muffin. Fortunately for you, I am about to change your mind.

Well that’s because this is a Mint Chocolate Chip Muffin with a few secret ingredients to give it its green color and it is not food coloring.  If you haven’t picked this up already, I love avocados and I love sneaking in Matcha Green Tea powder along with them.  This combo especially works with this recipe because the avocado gives the muffin incredible moistness

Now you are asking, how is this belly flattening?  Well the latest research on MUFAs state that foods high in mono unsaturated fatty acids reduce inflammation in the body-especially in the tummy.  They help to expel stubborn belly fat and foods especially high in this are Almonds, Avocados & Flax Seed-ding ding!  They’re all in there!  Even dark chocolate is considered a MUFA and that is in there too!

Well the most important part I am sure you want to know about is how does this taste good?  All of these bizarre ingredients (I may have snuck some spring mix in there as well 😉 ) go together?  This is all to thank to my favorite spring/summer herb- Mint!  Using fresh mint and a dash of mint extract gives this muffin the perfect flavor and covers up the bitter taste of matcha.

And of course, the best part of this recipe, it is part of my 1 minute muffin series which I wanted to call Melt Your Muffin Top 1 Minute Muffin Series-but that’s a little wordy.  So I kept it at 1 Minute Muffin Magic, because these muffins are soo tasty and healthy and really can help melt your muffin top!  When you feed your body food that is high in protein and has enough fat to satisfy your “fat tooth” (yes we have that too!) it will keep you fuller longer and help avoid blood sugar spikes that lead to craving junk food.  And even though these muffins are “low carb” since it is in muffin form you’re tricking your brain and making it think your eating a carb heavy meal.  This makes your brain release a neurotransmitter called serotonin which makes you feel warm and fuzzy.

So basically all you need to know is you need to try this recipe because it will make you happy and help shrink your belly.  The convenience of these 1 minute recipes leave you no excuses to not have breakfast, especially since you microwave them in a coffee cup, you can easily bring that with you and eat at work!


1/4 cup almonds

1 tbsp ground flax seed

1 egg

1 tsp matcha green tea powder

1 tsp baking powder

1 serving avocado (2-3 tbsp)

handful of fresh mint

1/2 tsp mint extract or to taste

1 serving dark chocolate- I like Ghiradelli 60%

*optional sneaky ingredient- 1/2 cup spring mix or baby spinach

DirectionsI do this in magic bullet, makes it super easy

-Grind your almonds to meal like consistency, I kept mine kind of crunchy for some texture – OR use almond flour

-Mix with flax seed, matcha and baking powder.

-Add egg, mint extract, fresh mint, avocado and spring mix is using.

-Make sure everything is well mixed and stir in chocolate chips.

-Put in coffee cup and microwave for 1 minute.  Check to see if the middle is cooked, and you may need to add 30 seconds because this is super moist.

This is the perfect way to start your morning & could not be any easier, healthier or tastier!

Healthy 1 Minute Chocolate & Peanut Butter Banana Bread, Gluten Free

This breakfast has me excited.  Like crazy supercalafrejdalisticexpealadoshus excited.  Why? Because I LOVE banana bread, kind of obsessively.  It is one of the very first things I started making on my own a few years ago and was that first recipe that I remembered on my own.  But the problem came when I got healthier and realized the typical ingredients in it are not that good for you…butter, and sugar, and flour, and then sometimes toasted with other toppings-like butter.  The calories add up quickly.  I have tried a lottttt of recipes for it and although some “lowfat” versions are good, they’re not great. Not like this one. Oh and the best part which the title may have given away, you microwave this puppy in 1 minute. Yes, this is part of my Magic 1 Minute Muffin series to show all of you that you:

I don’t know about you, but I can’t give up certain things, and banana bread is one of them.  So is peanut butter and chocolate.  Coincidentally, they all decided to have a party in my coffee mug and let me tell you, they got along really well.  This cake/bread was SO moist and PACKED with yummy nutty & sweet flavor.  And for sure what put it over the edge was the banana icing.  The natural sweetness of an overly ripe banana can work miracles in the kitchen.  I buy extra bananas just so I have some of those extra ugly brown bananas to throw in the freezer or use for occasions as amazing as these.

So without further a due, RUN, don’t walk, and go make this ASAP!  Then thank me for being awesome and coming up with this 😉 just kidding!


3-4 tbsp peanut flour (if you don’t have finely pulse peanuts {roasted is best} without making peanut butter)

1 super ugly brown/black banana (the uglier the better)

1 egg

1 tsp baking powder

1tsp vanilla extract

2 tbsp PB2

2 tsp cocoa powder

2-3 tbsp almond milk or other milk

1 tbsp peanut butter baking chips


-Pulse peanuts if you don’t have peanut flour (it is amazing though I recommend buying it).  If you use 3 tbsp you may have to microwave for 1 minute plus 30 seconds unless you want it gooey in the middle.

-Mix peanut flour with baking powder well, don’t want any clumps.  Add egg, vanilla and 1/2  the banana.

-In separate bowl make your PB2 and I mixed with cocoa powder unless you have chocolate PB2.

If you don’t have PB2 at all (um why would you not??) sub 1 tbsp chocolate peanut butter and make this a molten cake by dropping it in the middle.  Just like with original PB Cake

– Swirl the PB2 through the cake.

-Microwave for 1 minute in coffee mug and check to make sure the middle is cooked.  You may need to add 30 seconds because the banana adds a lot of moisture.

To make icing stir or blend the other half of banana with almond milk to create desired consistency.  Top the cake with icing and peanut butter baking chips.

So now I am sure you are thinking all of this decadence must come with a price? Well the answer is yes you will make your friends and co-workers very jealous when you come into work and only have 1 piece of DELICIOUS banana bread for yourself.  This is seriously one of the best breakfasts I’ve ever made and it’s pretty much dessert.  A super healthy, “I feel like I’m cheating” dessert.  So basically you are a fool if you don’t try this.  Yes I said it, now try and prove me wrong 😉

*You could make this healthier by subbing egg-white and sweetening up PB2 with stevia instead of using chips, but I haven’t tried it so I can’t vouch for it.

1 Minute Peanut Cake with Dark Chocolate PB Molten

After doing a little blog hopping last night, I came across something that was calling my name.  A peanut butter give away with a little friendly competition from Love Veggies & Yoga.  This was the perfect opportunity for me to try my peanut flour-dark chocolate peanut butter molten cake.  Slightly wordy and I am still working on the title but this one is for sure a home run.  The appeal of microwaving breakfast was magical to me and once I tried it last week from HEAB’s recipe I became hooked.  Now my mind is spinning with endless possibilities and combinations of flavor- I might run out of coffee mugs ;).  And especially now with this 1 minute DELICIOUS breakfast cake, you have absolutely no excuse to not have breakfast.

Oh and best of all, this is healthy!  No-seriously, I’m not kidding!  This is super high protein at 20 grams, 20 grams of carbs, barely 5 grams of sugar and the entire recipe is under 350 calories!!! Does it get any better than this?? Chocolate and peanut butter have been a vital part of my life and now that I can have it for breakfast guilt free?!? Heaven!

1/4 cup roasted unsalted peanuts (pulsed in blender till finely ground, but not making peanut butter)

OR 1/4 cup peanut flour

1.5 tsp cocoa powder

1 tsp vanilla extract

1 tsp baking powder

1 egg

1 tbsp Dark Chocolate Dreams Peanut Butter


Spray a deep coffee mug with non-stick spray.  Mix everything except the peanut butter.  Once everything is completely mixed, drop the tbsp of peanut butter in the middle of the mix so when it rises it creates the “molten” effect.  Microwave for 1 minute.  Pop the cake out and top with your favorite toppings.  I used a splash of sugar free syrup and some peanuts for garnish.  You could add even more peanutty delishness with some PB2 on top adding even more protein and still keeping it at 400 calories.  This has got to be one of the best ways to start any morning!

Look at that warmchocolaty molten goodness.  So sinful but so waistline friendly. Now go to your cupboard, get your coffee mug and make it happen!  Let me know how good yours turn out!
