No Excuses Easy Bake Fritatta

You have probably heard it 1,000+ times but I am here to tell it to you again.  EAT BREAKFAST! And not just any breakfast like a starchy bagel that will put you into a thanksgiving coma.  Eat something that is high in protein that will leave you satisfied and not on a sugar roller coaster.  It’s how we start our engines for the day and sets the tone for your metabolism.  Especially if you are trying to lose weight, giving yourself a high protein and high fiber meal tells your body to start burning calories ASAP because protein takes MORE calories to burn, whereas carbs will most likely be stored as fat.

For awhile I went through a frittata obsession and ate one every single day.  It is such an easy meal to prepare and keeps you full for a long time.  I love having it as a fall back for post-workout food when I need to make something quick.  This recipe is an even easier version of that because there is actually no cooking so there are NO excuses to not have this for breakfast!  I don’t want to hear you don’t have time for breakfast because for this all you have to do is preheat your oven, grate some cheese and eat.  You could even put everything in the ramekin the night before and just pop it into the oven in the morning. For this I used my Fiesta Salad (I know I just love this stuff) but feel free to use your own mix or have a blend of vegetables that are already sauteed in the fridge so you can just pour them into the ramekin.  And of course lots cheese & a few slices of avocado.

Ingredients:

1/2-1 cup fiesta salad

3 slices avocado

favorite mexican blend cheese

1-2 eggs

6 inch ramekin

Directions:

Preheat oven to 350 & grease your ramekin with non-stick spray.

-Throw fiesta salad in first or your favorite blend of vegetables. Top with avocado.  Beat 1-2 eggs (I only use one) and pour into ramekin, grate cheese on top.  Put the ramekin on a cookie sheet and bake until cooked about 10-15 minutes.  I baked for 10 minutes and then put the broiler on and let the top get firm yum 🙂

-If you are in a real hurry and cannot wait for it to cool, carefully place it into a coffee mug or Tupperware to bring with you.

I used a few pieces of my Buckwheat Tortilla Wrap that I just cut into chip size.  This was soooooo good and cheesy and satisfying, made for a very happy morning. Plus I love eating anything out of a ramekin so fun. 🙂  Have fun with this and use your own variation.  Now no excuses, you have time for breakfast!
